Love our dishes here at O Beach Ibiza? Well our Executive Chef Luciano Scardaccione Fox has let us in on a couple of his recipes so that you can recreate O Beach Ibiza´s most popular dishes in the comfort of your own home!

Goats Cheese Salad

You will need;
– 100g Goats cheese (sliced)
– 3x leaves Phylo pastry
– 10g Butter
– 80g Rocket
– 10g Red currants
– 10cc Olive oil
– 10cc Vinegar

First you need to cut the goats cheese with a wet fine knife and then cut the philo pastry in square pieces.

Cover the pastry with butter and close it like a serviette.

Cover them once again with butter and cook it at 200 degrees until brown, and leave to cool for 10 mins.
Meanwhile  get a bowl with a generous amount of rocket, add salt, pepper, balsamic vinegar and olive oil (in this order). Mix it up and add the red currants.

Serve and put the goats cheese on top. And enjoy

Lemon Mousse

You will need;lemon mousse
– 200cc Milk
– 1 Vanilla Stick
– 4 Egg Yolks
– 40g Sugar
– 2x Lemons
– 3x Jelly Strips
– 200cc Cream (Semi)
– 3x Egg Whites
-. 20g Sugar

Mix the milk with the sugar at a medium temperature approx 70 degrees. (Do not boil)
Add the vanilla stick and the 4 yolks.
Hydrate the lemon jelly with the lemon juice, once its hydrated add it to the yolk mix and take off the heat.
Take the egg white and sugar and whisk to make the meringue .
Mix the cream with the yolk and mix very carefully. Leave to cool for 2 hours and then add the red currants.
Best served cold with lemon peel and a red currant coule.
